Ingredients

  • 3 large baking apples (such as Honeycrisp), cubed (about 4 cups)

  • 2 teaspoons apple cider vinegar

  • 1 cup all purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon kosher salt

  • 1 stick unsalted butter, at room temperature

  • 1/2 cup white sugar

  • 2 tablespoons light brown sugar

  • 2 large eggs

  • 3 tablespoons dark rum

  • 1/2 teaspoon vanilla extract

  • 3 tablespoons white sugar for the top

  • 1 tablespoon powdered sugar for dusting (optional)


Directions

  1. The oven should be preheated to 350 degrees F (175 degrees C). Butter the cake pan, then place parchment paper on the bottom.
  2. Apples should be peeled, cored, and cut into cubes that range in size from 1/4 to 3/8 inch. If your cubes are any larger, they won't become delicate enough when cooked, but a bit smaller is acceptable.  Toss with apple cider vinegar in a big basin after adding.
  3. In a small bowl, combine salt, baking powder, and flour.
  4. Beat butter, 1/2 cup white sugar, and brown sugar with an electric mixer in a separate bowl until frothy and light. One egg should be added, and the mixture should be smooth, at a high speed. Repeat with the second egg. Rum, vanilla essence, and half of the flour mixture should be combined.  Add the remaining ingredients and combine with a spatula once the flour has completely disappeared.
  5. Apples should be folded into the batter until well-combined. Transfer the batter to the prepared pan, pressing it all firmly into place. Dust with remaining 3 tablespoons of sugar after smoothing top.
  6. Bake for about 45 minutes in the preheated oven, or until a skewer inserted in the center comes out clean.
  7. Take cake out of the oven and let it cool for about 30 minutes in the pan. Place a serving dish on top of the cake when it has been inverted onto a wire rack to cool. Add powdered sugar to the top before serving.
